Tabbouleh coodles


2 large courgettes spiralised
3 tbsp of olive oil
1 tbsp lemon or lime juice
1 tbsp Stevia or honey
1 small garlic clove crushed
handful of chopped mint
handful of chopped parsley
deseeded red chilli, chopped finely (optional)
2 tsp sunflower seeds (optional)


Spiralise your two courgettes on the thinnest setting, once spiralised set aside. In a separate bowl get all your remaining ingredients and once ready to serve toss in your courgettes.
