Sesame cucumber noodles


2 cucumbers
1 tbsp sesame seeds
1 tbsp of sesame oil
2 tsp Tamari sauce
2 tbsp rice wine vinegar
10 drops of stevia or 2 tsp of honey
A pinch of red pepper flakes
1 piece of ginger (optional)


Spiralize your cucumbers and place onto one half of a clean kitchen towel place the other half over your cucumber and press firmly to squeeze excess water.. In a bowl mix Tamari, Sesame oil, rice wine vinegar and stevia to taste. Once cucumbers have been successfully ‘dried’ (this should take two to three firm presses) place into the mixture. I like to grate ginger and chilli into this and serve with pieces of fillet steak or grilled salmon on top.
