Healthy egg mcmuffins for on the go

For a perfect grab and go breakfast try these healthy egg mcmuffins, this is a great way to pack in veggies for those that struggle to eat enough. 

Ingredients (Makes about 6)

8 eggs

1 tsp. of mild chilli powder

1 handful of Spinach

½ chopped red pepper

½ tsp. of onion powder

½ of garlic powder

1 tsp. of any mixed herbs I chose dill

S & P

Optional extras

**cheese for those that are not intolerant

Method

Preheat your oven to 180C.

Chop your red pepper and spinach and set aside. In a bowl, whisk up your eggs and combine with the rest of your ingredients. Grease a muffin tray and place your veggies in each ‘cup’ and pour your egg mixture over top.

Bake for 15 minutes until egg mixture looks cooked through, set aside to cool.
