Duck salad with toasted sesame seeds

Ingredients

Whole Gresham’s duck
1 cucumber
1 packet of rocket
1 avocado
1.2 packet of baby tomatoes on the vine
3 spring onions
1 large handful of chopped coriander
Sesame seeds toasted

For the dressing
1 tsp. of minced garlic
2 tbsp. of toasted sesame oil
1.5 tbsp. of Tamari
1 tsp. of fish sauce
Juice of ½ lime


Method

Preheat the oven to 200C and place your duck in the top shelf this should take around 50 mins – 1 hour to get nice and crispy.
Meanwhile throw your rocket into a bowl and spiralise your cucumber on top. Chop your baby tomatoes and avocado and place on top of the rocket and cucumber.
Once your duck is nice and crispy take out of the oven and pull the meat off the bone using two forks. Once the meat is off throw over the salad with your spring onion, coriander and toasted sesame seeds.

**For the dressing

In a small dressing shaker add garlic, lime, tamari, fish sauce and sesame oil – shake well and pour over your salad just before serving.
