2 tbsp. of coconut oil
2 cups of oats
1 cup of finely chopped mixed nuts
½ cup of sunflower and pumpkin seeds
1 tbsp. Of cinnamon powder
1.5 tsp. of vanilla essence
½ tbsp. of honey
½ cup of Goji berries
Pre heat your oven to 170C. In a pan melt your coconut oil on a low heat add the oats, mixed nuts, seeds, cinnamon powder and mix all the ingredients together ensure everything is well coated, next pour in your honey and vanilla essence and mix up all together.
Once mixed place your mix on a baking sheet ensuring it is all spread out evenly you will find that some of the mixture sticks together this is good as they will become clusters once cooked.
Roast in the oven for 10-12 minutes keeping an eye on it so it doesn’t burn. I like to add the Goji berries in last minute so they don’t burn! They create a lovely chewy texture for your granola.
** serving tip add cacao nibs for some chocolatey goodness or serve in a bowl with almond milk and chocolate protein powder.
