1 carcass of organic chicken with meat on it
2 large carrots pealed
2 fresh Bay leaves
2 stalks of celery
4 whole peppercorns
1 large onion quartered
2 sweet potatoes
1 packet of soba noodles
1 handful of peas
In a large pot place the chicken carcass, carrots, bay leaves (torn in half), celery, peppercorns, onion and sweet potato cover with cold water and bring to the boil- once boiled turn down to a simmer for 1.5 hours.
20 minutes prior to your stock being ready cook your soba noodles for 7-8 minutes adding your peas are the end in a large pan to prevent the water boiling over and becoming sticky once cooked drain and toss in cold water.
Once your stock is ready remove the carcass ensuring all the meat has fallen off into your stock serve in warm bowls with sour dough.
