Healthy chicken ‘nuggets’

This yummy recipe is the perfect treat for kids if they are craving something similar to chicken nuggets, and perfect for grown ups too when they feel like a bit of crunch!

Ingredients

1 bag of rocket
1/2 bag of spinach
2 sweet red peppers
1 avocado
2 tbsp. pumpkin and sunflower seeds
1 packet of cherry tomatoes on the vine

Two packets of small chicken fillets
3 free range eggs
Ground almonds 100g
2 tsp. Paprika
1 tsp. Ground peppercorns
½ tsp. of Maldon salt
1 tsp. of smoked garlic powder

For the dressing

1 garlic clove
1 tsp. Maldon salt
1tsp. ground pepper
1 tsp. of Colman’s dry mustard powder
3 large tbsp.. of olive oil
½ tbsp. of Apple cider vinegar
1 tsp. of grainy mustard

In a bowl prepare your salad, carefully slicing your avocado on top.

Prepare your nuggets

Separately whisk up your eggs in a bowl. On a plate mix up your ground almonds, garlic powder, paprika, pepper and salt. Rinse your fillets in water and place them in the egg mixture, once dipped and eggy all over, place on the plate with the almond mixture and thoroughly coat. Put the well-coated strips on a baking tray. Once all pieces are coated place in the oven at 200C for 20 minutes if they don’t look crispy enough give them a final blast under a hot grill for five.

For the dressing

In a pestle and mortar add your garlic, pepper and salt and grind down to a paste, add your mustard powder and keep grinding until it forms a yellowy mixture. Now add your olive oil and apple cider vinegar and keep stirring. Once stirred add your grainy mustard and taste test.
