Asian salmon salad

Ingredients

Grilled or poached Salmon
4 X Pealed Quail eggs (boiled for 2-3 mins)
Handful of chopped coriander
Handful of chopped spinach
Cucumber (spiralized)
X tomatoes from the vine
Combo of sesame, pumpkin and sunflower seeds

For the dressing
¼ tsp. of minced garlic
Juice of half a lime
1 tsp. of fish sauce
1 tbsp. of toasted sesame oil
1.5 tbsp. of Tamari

Method

Poach (in a pan of water, bring to the boil and poach for 8 minutes) or grill your salmon under a hot grill for about 15 -20 minutes. Chop your spinach and coriander finely, along with your tomatoes and toss in a bowl. Then add your spiralised cucumber and quartered quail eggs. Separately measure all ingredients for your dressing into a small jar and shake. Once the salmon is cooked place flaked or whole on top with the seed mixture and pour your dressing over top et voila!
