Candied bananas with vanilla and cinnamon cashew cream

There is nothing wrong with a little bit of naughtiness here and there and my candied banana and cashew cream split, is the perfect cure for that sweet tooth!


2 medium bananas

2 tbsp. of maple syrup

½ cup of mixed nuts

1 cup of activated cashews (activated, means you need to soak them over night in water or if you are on limited time, quicken up the process by soaking them for 15 minutes in boiling water)

¾ cup of filtered water

1 vanilla date or organic vanilla bean paste

2 large pinches of cinnamon


Pre-heat your grill to 200C. Line a baking tray with parchment and half your bananas. Glaze your bananas with maple syrup and place under the grill for ten minutes until golden brown

For your cashew cream

In your high speed blender place your rinsed cashews and ¾ cup of water, click your blender onto variable and start on speed 1 slowly increasing the speed to 10 until you create the desired creamy texture, this should only take a minute once you have reached 10 click your blender to high, add in your vanilla and cinnamon.

Once your cashew cream and bananas are ready layer them in a glass, I always love to layer using nuts first with banana and cashew cream on top {repeat}. Finish with cashew cream, a sprinkle of nuts and cinnamon.
