Take away without the guilt

We all know too well what the ‘Friday feeling’ feels like. We all want to run home sit on the sofa in our onsie, knock back copious amounts of wine and indulge in a ultra calorific take away – whilst revelling in the fact that tomorrow there will be no alarms.

In reality we all know that this is not the best start or option for the weekend ahead. Don’t get me wrong I love a glass of red and there is nothing wrong with a glass or two, after all it is full of resveratrol… however the take away for me is one step too far and something we all feel guilty about the following day…

However do not fear this week I have the solution and I am ready to blog about it, it comes in the form of a big bowl of Eggcellent Quinoa fried rice and prawns – I swear to you ladies and gentleman this is the dish for your take away fix…

Ingredients

2 tsp. of coconut oil
½ cup of frozen peas
¼ clove of garlic finely chopped
4 spring onions finely chopped
2 carrots finely chopped
2 eggs
3 cups of pre cooked Quinoa
1 packet of well rinsed organic prawns
1 tbsp. of tamari or soy sauce
Chopped chillies to taste

Method

In a wok on a medium to high heat fry your garlic, spring onions, peas and carrots until peas are nicely cooked and carrots are still al dente, push the veggies to the back of your wok and up the heat to full. Next fry your eggs in the pan whisking it up so its nice and fluffy- throw in your quinoa and prawns and stir until cooked. Finely stir in your tamari and chillies (taste test).
